Coconut Shrimp Curry

Ingredients:
1 lb Medium prawns,peeled and deveined
Salt to taste
1 tsp turmeric powder
2 cups (1 can) coconut milk
4 tbsp mustard oil
4 green chillies
1 tsp cumin seeds
1 tsp mustard seeds
½ red chilli powder
1 tbsp cumin powder
1 tsp sugar
2 tbsp ginger paste
1 tbsp chopped cilantro

Directions:
Place prawns in a bowl. Add salt and turmeric powder. Mix and let them marinate for 15 minutes. Slit green chillies
Heat 3 tbsp mustard oil in a non stick pan. Add prawns and sauté for 1 minute. Transfer into a bowl and set aside.
Add 1 tbsp mustard oil to the same pan and heat. Add cumin seeds and mustard seeds and cover the pan and allow the seeds to splutter. Add green chillies, prawns, coconut milk and cook on medium heat for ½ minute. Add red chilli powder, cumin powder, sugar and ginger paste and mix.
Cook till the prawns are done. Garnish with chopped cilantro and serve hot.
